I. Preparation


  Hot water : adjust to 82-84 ℃

                     One person : 120-140cc

              Increase the heat for more bitterness

                      Decrease the heat for more acidity

  Coffee beans:  Approx.15g  / One person

                   Middle coarsely ground

                                   

  Age for a night after roasting for better taste. 

  Consume coffee beans within two weeks for best tasting      

  coffee.

  A well-balanced taste with body is influenced by the 

   strength of the coffee.           

 If you standardize the amount of coffee beans for each usage,           it becomes easier to adjust the variations of taste, depending            on certain situations, like morning, after dinner etc..

  1. II.STEAMING 

Steaming expands each grain of coffee in order to draw the

fullest quality from the drippings.

 

1. Pour the hot water gently into the center as if drawing a 

    small circle.







 2. Steaming

       The grains begin to expand within twenty seconds from 

      the bottom to the surface.








  




  1. 3.Continue pouring the hot water gently, gradually spiraling

    outward. 


note:  Careful not to pour water directly onto the drip paper.




4. Continue steaming

    The grains that absorbed hot water enough expand fully

    to cover the surface.


  

  1. 5.It isn't completely necessary to wet each grain, as the hot

    water will gradually spread through the coffee grains.

    

6. The fresher the coffee beans are after roasting,

    the bigger the grains expand.





  1. III.POURING

 


7. Gently pour hot water into the center.

  












  1. 8.add hot water as if drawing individual circles, waiting a  

    moment or two in-between each. 














  1. 9.Soon, a bank of grains appears on the edge of the

    dripper. 

     















  1. 10.Pour hot water slowly, without breaking the bank, so

   that each grain of coffee will absorb the proper amount

      of hot water in order to draw out the fullest taste of coffee.
















  


11. Remove the dripper without dropping any foam.
